The "chef" is obviously very ignorant and doesn't realize that symptoms don't usually occur immediately. At least, for the most part, most who eat GF can tell if an item is GF or not because the texture & flavor are usuallly different.
I'm sure he will learn the error of his thinking after the GF community hears more of this.
This man should not be allowed to serve the public. His ignorance and attitude could, and already, may have caused great harm.
Makes you wonder who you can trust? Unfortunately those of us with gluten intolerance or Celiac Disease cannot ingest gluten, and the effects can take a while to show up, sigh...
