No Crust Apple Pie= yum!

I had a bunch of apples to use up, so I decided to try this pie, it was delicious and enjoyed by everyone! Easy to make, this was my first apple pie I tried gluten free, so pleasantly surprised



Ingredients

    1. 4 -5 medium apples ( peeled, cored, and sliced)
    2. 1 1/4 cups sugar ( divided)
    3. 3 teaspoons cinnamon
    4. 3/4 cup butter or 3/4 cup margarine
    5. 1 cup flour
    6. 1 eggs

Directions

  1. Preheat oven to 350.
  2. Fill pie pan 3/4 full with apples.
  3. Mix 1/4 cup sugar and 3 tsp cinnamon.
  4. Sprinkle over apples.
  5. In saucepan, melt butter and remove from heat.
  6. Add remaining ingredients (including the 1 cup of sugar remaining).
  7. Pour evenly over the apples in pan.
  8. Bake 45 minutes.

Eden Organic Black Bean and Quinoa Chili Gluten Free

Thanks to the good folks at Eden Foods I was able to sample this for lunch today.  It looked delicious and tasted that way too.  I ate some of it by itself, some with tortilla chips, and also put some on a gluten free roll.  This would also be great wrapped in some corn tortillas.  My son also ate a bit of it for lunch.  It has a bit of a kick to it, but just enough to make it tasty, not too spicy. 





I love that the cans are BPA free!  Also, this is organic another plus!

Sofella Foods Gluten Free Brownies/Cake Review

Thanks to Sofella Foods I was sent a few samples to try.  I decided to make chocolate chip brownies with their cake mix.  They sent me a few sample recipes, so it was easy to follow.  I took the suggestion of greasing the pan and using parchment paper, these turned out so good!  They were like cake brownies.  The sides were not hard or cripsy at all which usually happens to me when making brownies.  Now to restrain myself from eating the whole thing, lol.

CPK pulls gluten free pizza

California Pizza Kitchen has pulled the gluten-free crust option from its menu at all locations. CPK says that it is reviewing the pizza prep methods with an eye toward bringing it back in the future.
